Refreshing and Healthy Nectarine Popsicles Recipe

These nectarine popsicles are a delightful, easy-to-make frozen treat combining juicy nectarines, almond milk, and a touch of maple syrup. A healthy, homemade, and vegan-friendly summer snack!

Ingredients
  

  • 2 cups roughly chopped nectarines
  • 3/4 cup Almond Breeze Almondmilk Coconutmilk Original Unsweetened
  • 1 tablespoon pure maple syrup
  • 1/2 cup finely chopped nectarines

Instructions
 

  • Prepare the nectarines by washing, pitting, and roughly chopping 2 cups of the fruit. Set aside the additional 1/2 cup of finely chopped nectarines for later.
  • In a blender, combine the chopped nectarines, almondmilk, and maple syrup. Blend until the mixture is completely smooth, about 30 seconds to 1 minute.
  • Divide the finely chopped nectarines evenly among the wells of your popsicle mold for added texture and flavor.
  • Pour the blended mixture over the chopped nectarines in the mold, filling each well just below the top. Insert popsicle sticks into each well.
  • Place the filled mold in the freezer and freeze for at least 2 hours, or until the popsicles are completely solid.
  • To remove, briefly run the popsicle mold under warm water to loosen, then gently pull out each popsicle. Enjoy immediately or store in an airtight container in the freezer.
