Refreshing and Healthy Nectarine Popsicles Recipe
These nectarine popsicles are a delightful, easy-to-make frozen treat combining juicy nectarines, almond milk, and a touch of maple syrup. A healthy, homemade, and vegan-friendly summer snack!

- 2 cups roughly chopped nectarines
- 3/4 cup Almond Breeze Almondmilk Coconutmilk Original Unsweetened
- 1 tablespoon pure maple syrup
- 1/2 cup finely chopped nectarines
Prepare the nectarines by washing, pitting, and roughly chopping 2 cups of the fruit. Set aside the additional 1/2 cup of finely chopped nectarines for later.
In a blender, combine the chopped nectarines, almondmilk, and maple syrup. Blend until the mixture is completely smooth, about 30 seconds to 1 minute.
Divide the finely chopped nectarines evenly among the wells of your popsicle mold for added texture and flavor.
Pour the blended mixture over the chopped nectarines in the mold, filling each well just below the top. Insert popsicle sticks into each well.
Place the filled mold in the freezer and freeze for at least 2 hours, or until the popsicles are completely solid.
To remove, briefly run the popsicle mold under warm water to loosen, then gently pull out each popsicle. Enjoy immediately or store in an airtight container in the freezer.
