Ingredients
  

  • 2 tablespoons white balsamic vinegar
  • 2 teaspoons extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon za'atar or cumin
  • 1/4 teaspoon black pepper
  • 3 cups cucumber, diced
  • 2 cups cantaloupe melon, diced
  • 4 ounces feta cheese block (in water), cut into small cubes (omit for vegan)
  • 1 cup watercress or baby arugula *

Instructions
 

  • Whisk together the white balsamic vinegar, extra virgin olive oil, kosher salt, za’atar, and black pepper in a small bowl until fully combined.
  • In a large mixing bowl, combine the diced cucumbers, cantaloupe, and feta cheese. Drizzle the dressing over the top and gently toss to coat evenly.
  • Arrange the watercress or baby arugula on a serving platter and top with the cucumber-melon mixture. Lightly toss again if desired for a more incorporated salad.
  • Serve immediately and enjoy this burst of summer flavor!

Notes

The 4 oz of feta cheese equates to about 1 cup chopped; we recommend avoiding pre-crumbled feta as it can taste dry. For a vegan version, skip the cheese and include salty capers or olives for a similar flavor pop. Swap cantaloupe with honeydew, watermelon, or papaya for variety.
