- 1/2 cup sugar
- 4 tablespoons salted butter
- 3 tablespoons heavy cream
- Pinch salt
- 4 ounces unsweetened chocolate
- 1 stick salted butter (8 tablespoons)
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- Pinch salt
Preheat your oven to 350°F. Line an 8x8-inch square baking pan with parchment paper and coat it with non-stick cooking spray. Also, line a plate with parchment paper for the caramel.
In a small saucepan over medium-high heat, add the sugar and stir frequently as it melts. It will clump first before turning smooth. Once melted, remove it from the heat, stir in butter, and then slowly whisk in cream until combined. Return to heat and let it bubble for 2 minutes, then pour it onto the parchment-lined plate. Freeze for 20-30 minutes.
Melt the chocolate and butter together in the microwave or over a double boiler. Stir in the sugar, then whisk in eggs and vanilla until smooth. Gently fold in the flour and a pinch of salt until just combined.
Remove the caramel from the freezer and cut it into small pieces. Fold most of the caramel pieces into the batter and pour it into your prepared baking pan. Sprinkle any remaining caramel pieces on top.
Bake for 30 minutes, or until the center is just set. For clean slices, let the brownies cool completely in the fridge before cutting.
