Extra virgin olive oil

asparagus, trimmed and sliced into 3-inch pieces
Kosher salt
Black pepper

lemon, zested and juiced

Aleppo pepper or red pepper flakes

za’atar

jarred roasted red peppers, drained and chopped

feta cheese, crumbled (or more to your liking)
Instructions
Place a cast iron skillet over medium-high heat. Add enough olive oil to coat the bottom (about 1/4 cup) and heat until shimmering.
Add the asparagus to the hot pan, season with a pinch of salt and black pepper, and toss frequently for 2 minutes.
Add minced garlic and chopped shallots. Continue cooking and tossing until asparagus is tender but still has a bright green color, about 3 minutes.
Remove from heat and stir in lemon juice, zest, Aleppo pepper, and za’atar.
Plate the asparagus, then sprinkle the roasted red peppers and crumbled feta cheese on top for the perfect finishing touch.
Notes
For a vegan option, replace feta with vegan feta or omit entirely. Adjust za’atar or spice levels based on your preference.
