Sautéed Asparagus with Garlic

Ingredients
  

  • Extra virgin olive oil
  • 1 pound asparagus, trimmed and sliced into 3-inch pieces
  • Kosher salt
  • Black pepper
  • 3 garlic cloves minced
  • 1 shallot, chopped
  • 1 lemon, zested and juiced
  • 1 teaspoon Aleppo pepper or red pepper flakes
  • 1 teaspoon za’atar
  • 1/3 cup jarred roasted red peppers, drained and chopped
  • 1/3 cup feta cheese, crumbled (or more to your liking)

Instructions
 

  • Place a cast iron skillet over medium-high heat. Add enough olive oil to coat the bottom (about 1/4 cup) and heat until shimmering.
  • Add the asparagus to the hot pan, season with a pinch of salt and black pepper, and toss frequently for 2 minutes.
  • Add minced garlic and chopped shallots. Continue cooking and tossing until asparagus is tender but still has a bright green color, about 3 minutes.
  • Remove from heat and stir in lemon juice, zest, Aleppo pepper, and za’atar.
  • Plate the asparagus, then sprinkle the roasted red peppers and crumbled feta cheese on top for the perfect finishing touch.

Notes

For a vegan option, replace feta with vegan feta or omit entirely. Adjust za’atar or spice levels based on your preference.
