Ingredients
  

  • ¼ cup rice vinegar
  • 2 tablespoons tamari, plus more for serving
  • ½ teaspoon toasted sesame oil, plus more for serving
  • 1 teaspoon grated fresh ginger
  • 1 clove grated garlic
  • ½ teaspoon maple syrup or honey
  • 6 ounces soba noodles*
  • Lemon wedge, for squeezing
  • 2 avocados, sliced
  • 2 cups blanched snap peas
  • ¼ cup edamame
  • 1 watermelon radish, or 2 red radishes, very thinly sliced
  • ¼ cup fresh mint leaves
  • Sesame seeds

Instructions
 

  • Make the dressing: In a small bowl, whisk together the rice vinegar, tamari, sesame oil, grated ginger, garlic, and maple syrup or honey. Set it aside for the flavors to meld.
  • Cook the noodles: Bring a pot of unsalted water to a boil and cook the soba noodles according to the package instructions. Once cooked, drain and rinse them thoroughly under cold water to remove excess starch and prevent clumping.
  • Toss with dressing: In a large bowl, combine the soba noodles with the prepared dressing, ensuring an even coating on each noodle.
  • Assemble the salad: Divide the noodles into bowls and top with sliced avocado, blanched snap peas, edamame, thin radish slices, fresh mint leaves, and a sprinkle of sesame seeds.
  • Finish with flavor: Drizzle more tamari or sesame oil on top, if desired, and add a squeeze of lemon juice to brighten the dish.

Notes

*For gluten-free diets, use 100% buckwheat soba noodles.
