- 3 cups Kodiak Cakes buttermilk pancake and waffle mix, or your favorite flavor
- 2 1/4 cups milk of choice (we used unsweetened almond milk)
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 tablespoons melted butter or coconut oil
- Toppings: blueberries, sliced strawberries and chocolate chips, sliced bananas, or nuts
Preheat your oven to 350°F and grease a quarter sheet pan or line it with parchment paper.
In a large mixing bowl, whisk together the Kodiak mix, milk, eggs, vanilla, and melted butter or coconut oil. Stir until just combined—don’t overmix, as this could make the pancakes dense.
Pour the batter evenly into your prepared sheet pan, using a spatula to smooth the surface.
Sprinkle your chosen toppings evenly across the batter. Divide the toppings by section if you want different flavors in one batch.
Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean and the top is lightly golden.
Allow the pancakes to cool slightly in the pan before slicing them into squares or rectangles.
Serve warm with a drizzle of maple syrup, nut butter, or a dollop of Greek yogurt for an extra protein boost.
