Ingredients
  

  • 3 cups Kodiak Cakes buttermilk pancake and waffle mix, or your favorite flavor
  • 2 1/4 cups milk of choice (we used unsweetened almond milk)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 tablespoons melted butter or coconut oil
  • Toppings: blueberries, sliced strawberries and chocolate chips, sliced bananas, or nuts

Instructions
 

  • Preheat your oven to 350°F and grease a quarter sheet pan or line it with parchment paper.
  • In a large mixing bowl, whisk together the Kodiak mix, milk, eggs, vanilla, and melted butter or coconut oil. Stir until just combined—don’t overmix, as this could make the pancakes dense.
  • Pour the batter evenly into your prepared sheet pan, using a spatula to smooth the surface.
  • Sprinkle your chosen toppings evenly across the batter. Divide the toppings by section if you want different flavors in one batch.
  • Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean and the top is lightly golden.
  • Allow the pancakes to cool slightly in the pan before slicing them into squares or rectangles.
  • Serve warm with a drizzle of maple syrup, nut butter, or a dollop of Greek yogurt for an extra protein boost.
