Roma tomatoes

English cucumber or 4 small Persian cucumbers

green or red bell pepper
finely chopped

red onion
finely chopped

fresh lemon or lime juice

Instructions
Add the tomatoes, cucumbers, bell pepper, red onion, parsley, mint, and dill to a large mixing bowl.
Drizzle the freshly squeezed lemon juice and olive oil over the vegetables.
Season with sumac, sea salt, and freshly ground black pepper. Toss gently to combine.
Taste and adjust the seasoning as needed. Add more lemon juice or sumac for extra tang if desired.
Refrigerate the salad for at least 10 minutes before serving to allow the flavors to come together.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Stir well before serving to redistribute the dressing.
