Ingredients
  

  • 1-1/4 cups uncooked whole wheat orzo pasta
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 2 medium tomatoes, chopped
  • 2 tablespoons lemon juice
  • 1-1/4 pounds uncooked shrimp (26-30 per pound), peeled and deveined
  • 2 tablespoons minced fresh cilantro
  • 1/4 teaspoon pepper
  • 1/2 cup crumbled feta cheese

Instructions
 

  • Bring a medium-sized pot of water to a boil. Cook the orzo according to package directions until al dente, then drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Once hot, add minced garlic and sauté for 1 minute, stirring to release its aroma.
  • Stir in chopped tomatoes and lemon juice, bringing the mixture to a gentle boil.
  • Add the shrimp to the skillet. Reduce the heat to low and let the shrimp cook, uncovered, for 4-5 minutes or until they turn pink and opaque.
  • Stir the drained orzo into the skillet, followed by the minced cilantro and pepper. Mix everything well to coat.
  • Sprinkle the crumbled feta cheese over the top and let it slightly melt before serving.
