Ingredients
  

  • 2 lbs. boneless, skinless chicken thighs or breasts, cut into 1-inch pieces*
  • 1 (16-ounce) jar salsa verde (such as Trader Joe’s, Late July, or Herdez)
  • 2 (4-ounce) cans diced green chiles
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • lbs. red potatoes, cut into 1-inch pieces
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon fine sea salt
  • ½ teaspoon black pepper
  • cups low-sodium chicken broth
  • Optional toppings: avocado, fresh cilantro, lime wedges, jalapeños, warm tortillas, sour cream, shredded cheese

Instructions
 

  • Prep your ingredients: Chop the chicken, dice the onion, and cut the potatoes into bite-sized pieces. Mince the garlic to release its full flavor.
  • Combine everything: In your slow cooker, add the chicken, salsa verde, diced green chiles, onion, garlic, potatoes, cumin, oregano, salt, pepper, and chicken broth. Stir everything together to evenly distribute the spices.
  • Cook: Cover with the lid and set your slow cooker to cook on High for 4 hours or Low for 8 hours. You’ll know it’s ready when the potatoes are fork-tender and the stew has thickened slightly.
  • Finish: Taste and adjust the seasoning with additional salt and pepper as needed. Serve hot with your choice of toppings.
