Ingredients

  • 2 pounds beef stew meat or chuck roast cut into bite-sized chunks
  • 4 tablespoons unsalted butter melted
  • 2 tablespoons olive oil
  • 6 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon onion powder
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley chopped (for garnish)

Instructions

Prepare the beef

  • Pat the beef chunks dry with a paper towel to remove excess moisture. This helps them brown nicely if you choose to sear them. Season the beef with salt, pepper, and onion powder.

Sear the meat (optional)

  • For extra flavor, heat olive oil in a skillet over medium-high heat and sear the beef in batches until browned on all sides. This step is optional but adds a delicious depth of flavor.

Assemble in the slow cooker

  • Place the beef in the slow cooker. In a small bowl, mix the melted butter, minced garlic, thyme, and rosemary. Pour this mixture over the beef, making sure it’s evenly coated.

Cook low and slow

  • Cover the slow cooker with the lid and cook on low for 4-6 hours, or until the beef is tender and infused with the garlic butter flavors. Stir occasionally if possible.

Garnish and serve

  • Once cooked, sprinkle the beef bites with fresh parsley for a pop of color and added freshness. Serve warm with your favorite sides!
