- 1 cup plain Greek yogurt (whole, 2%, or low-fat)
- 2-4 cloves garlic minced or finely grated
- 2 teaspoons fresh lemon zest
- 2 tablespoons fresh lemon juice
- 1 1/2 teaspoons kosher salt divided
- 2 pounds boneless, skinless chicken breasts or thighs
In a medium bowl, whisk together the yogurt, garlic, lemon juice, lemon zest, and 3/4 teaspoon of the salt.
Place the chicken in a 6-quart slow cooker. Sprinkle evenly with the remaining 3/4 teaspoon of salt.
Pour 1/3 cup of the prepared yogurt sauce over the chicken, tossing to coat evenly.
Cover the remaining yogurt sauce and refrigerate while the chicken cooks.
Cover the slow cooker and set it to cook on high for 2-4 hours or low for 4-6 hours, until the chicken is tender and fully cooked.
Once cooked, remove the chicken from the slow cooker. Slice it into strips or shred using two forks.
Strain the cooking liquid, reserving about 1/4 cup. Discard the remaining liquid.
Return the shredded chicken to the slow cooker and toss with the reserved cooking liquid and 1/3 cup of the yogurt sauce.
Warm the chicken on high for 5 minutes before serving.
Serve with the remaining yogurt sauce drizzled on top or on the side for dipping.
