Ingredients
  

  • 3 large Medjool dates, pitted (¼ cup packed)
  • 1 cup unsweetened almond milk (or light coconut milk)
  • ¾ cup frozen cauliflower florets
  • 1 tablespoon tahini
  • ½ teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • 1 tablespoon cacao powder
  • 1 scoop protein powder of choice
  • 1 tablespoon flaxseed meal
  • ¼ cup gluten-free rolled oats

Instructions
 

  • Place the pitted dates in a bowl and cover them with 1 cup of warm water. Let them sit for at least 5 minutes to soften.
  • While the dates are soaking, measure out the rest of your ingredients and set them aside for a smooth workflow.
  • Combine the pitted dates, almond milk, frozen cauliflower, tahini, vanilla extract, cinnamon, cacao powder, protein powder, flaxseed meal, and oats in a high-powered blender.
  • Blend until smooth, stopping to scrape the sides or add a splash more almond milk if needed to reach your desired consistency.
  • Pour into a glass, dust with an extra pinch of cinnamon for garnish, and enjoy immediately.

Notes

To customize the recipe for your diet, swap dates for a low-carb sweetener, add extra protein powder, or substitute tahini with sunflower seed butter. Soak dates overnight for quicker preparation in the morning.
