  • 4 cups lettuce, chopped
  • 1 cup cucumber, sliced
  • 1/2 cup cherry tomatoes, sliced
  • 1/2 cup red onions, sliced
  • 1 medium baked chicken breast
  • 1 boiled egg
  • 1/2 cup mayonnaise (we used homemade mayo)
  • 2 tablespoons Sriracha hot sauce or any hot sauce you prefer
  • 1 teaspoon freshly squeezed lemon juice
  • Salt and black pepper to taste

Instructions

  • Prep Your Ingredients: Start by chopping the lettuce, slicing the cucumber, tomatoes, and red onions, and boiling the egg.
  • Assemble the Salad: Spread the lettuce at the bottom of a large bowl. Layer on the cucumber, cherry tomatoes, and red onions evenly.
  • Place Protein On Top: Slice the baked chicken breast into strips and arrange over the veggies. Add the boiled egg, halved or quartered, for garnish.
  • Make the Spicy Mayo Dressing: In a small bowl, mix the mayonnaise, Sriracha, lemon juice, and a pinch of salt and pepper. Adjust the heat level to your preference by adding more or less Sriracha.
  • Finish and Serve: Drizzle the dressing over the salad, toss gently, and serve immediately for the freshest experience.
