Ingredients
  

  • 1 teaspoon rice vinegar
  • ½ teaspoon low-sodium soy sauce
  • ¼ teaspoon honey
  • ¼ cup thinly sliced English cucumber
  • 1 tablespoon mayonnaise
  • 1 tablespoon thinly sliced scallion
  • ½ teaspoon Sriracha or other hot sauce
  • ½ teaspoon toasted sesame oil
  • Pinch crushed red pepper (optional)
  • 2 ½ ounces no-salt-added water-packed canned tuna, drained
  • 1 toasted whole-wheat English muffin

Instructions
 

  • In a small bowl, whisk rice vinegar, soy sauce, and honey together.
  • Add cucumber slices to the bowl and toss to coat evenly. Set aside to marinate.
  • In another small bowl, combine mayonnaise, scallion, Sriracha, sesame oil, and crushed red pepper (if using).
  • Fold in the drained tuna until well mixed.
  • Drain the cucumbers to remove excess liquid.
  • Spoon the tuna mixture onto one half of the toasted English muffin.
  • Top with drained cucumber slices and cover with the remaining muffin half. Serve immediately.
