- 1 pound boneless, skinless chicken thighs
- ½ teaspoon kosher salt
- ½ teaspoon dried thyme
- ½ teaspoon ground pepper
- 8 cups baby spinach (about 2 cups per serving)
- 2 cups sliced strawberries
- ¼ cup feta cheese (optional)
- ¼ cup chopped toasted walnuts
- 6 tablespoons balsamic vinaigrette
Preheat the oven to 400°F and line a baking sheet with parchment paper or foil for easy cleanup.
Place the chicken thighs on the prepared baking sheet, then season both sides with the salt, thyme, and pepper.
Roast the chicken for 15-17 minutes, flipping halfway through, until it reaches an internal temperature of 165°F. Let it cool, then slice into bite-sized pieces.
Divide the spinach evenly among four single-serving lidded containers. Top each with one-fourth of the cooked chicken, ½ cup of sliced strawberries, 1 tablespoon of feta (optional), and 1 tablespoon of walnuts.
Transfer 1 ½ tablespoons of balsamic vinaigrette into four small lidded containers. Refrigerate all components for up to four days.
