- 3 cloves garlic finely chopped
- 1/3 cup olive oil
- 1/3 cup fresh lime juice
- 2 tablespoons Sriracha
- 1 teaspoon white sugar
- 1/2 teaspoon toasted sesame oil
- 10 ounces spaghetti or fettuccine
- 1 teaspoon toasted sesame oil
- 2 cups cilantro stems discarded, leaves roughly chopped
- 1 cup basil leaves torn
- 1 cup finely shredded Napa cabbage
- 1 cup chopped mango
- 2/3 cup sliced green onions
- 2/3 cup shredded carrots
- 1/2 cup chopped peanuts
- 3 tablespoons pickled ginger roughly chopped
- 1 avocado sliced or diced
Bring a pot of salted water to a boil. Cook the noodles according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process.
In a small mixing bowl, whisk together the garlic, olive oil, lime juice, Sriracha, sugar, and sesame oil until emulsified. Set aside to let the flavors meld.
Toss the cooled noodles with toasted sesame oil to prevent sticking.
In a large salad bowl, combine the noodles, cilantro, basil, Napa cabbage, mango, green onions, carrots, and peanuts.
Pour two-thirds of the Sriracha lime dressing over the salad. Gently toss everything to coat the ingredients evenly.
Add the pickled ginger and avocado, tossing lightly to incorporate. Taste and add more dressing if needed.
Serve this vibrant salad at room temperature or chilled for an ultra-refreshing meal or side dish.
