Steak Grapefruit Salad

- 1 M&S British beef sirloin steak
- 1 pouch (250g) M&S microwave wholegrain rice
- 15g Thai basil, roughly torn
- 15g coriander, roughly chopped
- 2 M&S red grapefruits, peeled and cut into thin segments
- 5 tbsp M&S nuoc cham dipping sauce
- 2 tbsp M&S crispy onions
- 1/4 M&S Remarksable Value white cabbage, thinly sliced
- 80g edamame beans
- 2 M&S baby carrots, cut into matchsticks
- 1 lime, juice only
Remove the steak from the fridge so it reaches room temperature. Liberally season with salt.
Heat 1 tablespoon of olive oil in a large frying pan over high heat. Sear the steak for 2-3 minutes per side for rare, or 3-6 minutes for medium. Rest the steak on a cutting board for at least 5 minutes.
Microwave the pouch of wholegrain rice for 90 seconds or according to the package instructions. Let it cool slightly.
In a large bowl, combine white cabbage, carrots, edamame beans, coriander, Thai basil, and grapefruit segments. Add the cooled rice.
Pour the nuoc cham dipping sauce and lime juice over the salad, then toss until evenly coated.
Thinly slice the steak against the grain and fold it into the salad bowl. Ensure it’s evenly distributed throughout.
Divide into serving bowls, top with crispy onions, and add extra nuoc cham if desired. Serve immediately!
