Ingredients
  

  • 2 cups whole wheat pastry flour (or all-purpose flour)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ cup avocado oil
  • ¾ cup coconut sugar
  • 2 large eggs
  • 1 ½ cups mashed banana (about 3 medium bananas)
  • cup plain full-fat Greek yogurt
  • 1 teaspoon vanilla
  • 1 ½ cups chopped strawberries (pat dry with a paper towel)
  • A few extra strawberry slices for topping

Instructions
 

  • Preheat your oven to 350°F and lightly coat a loaf pan with cooking spray.
  • In a medium mixing bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • In a larger bowl, combine the avocado oil, coconut sugar, eggs, mashed bananas, Greek yogurt, and vanilla. Whisk until smooth.
  • Gradually fold the dry ingredients into the wet mixture. Be careful not to overmix—some streaks of flour are okay.
  • Gently fold in the chopped strawberries until just incorporated.
  • Pour the batter into the prepared loaf pan, spreading it evenly. Arrange the sliced strawberries on top for a beautiful finish.
  • Bake for 60-75 minutes, covering the bread with foil around the 45-minute mark to prevent over-browning. The bread is done when a toothpick inserted into the center comes out clean.
  • Cool in the pan for 10 minutes, then transfer the loaf to a wire rack to cool completely before slicing.
