Strawberry Crepes

These strawberry crepes combine a light, tender crepe with a luscious strawberry filling for an easy homemade treat. Perfect for breakfast, brunch, or dessert, and ready in 20 minutes!

Ingredients
  

  • 4 eggs, room temperature
  • 3 Tablespoons unsalted butter, melted
  • 2 1/4 cups milk
  • 2 cups all-purpose flour
  • 3 Tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 Pinch of salt
  • 1 8-ounce jar Bonne Maman INTENSE Strawberry Fruit Spread
  • 1 cup heavy whipping cream

Instructions
 

  • Grease a medium skillet with cooking spray and preheat over medium heat.
  • In a blender, combine eggs, melted butter, milk, flour, sugar, vanilla, and salt. Blend until smooth but don’t overmix.
  • Using a 1/4 cup measure, pour batter into the center of the skillet. Quickly lift and tilt the pan to evenly coat the bottom with a thin layer of batter.
  • Cook for 30 seconds, until the edges begin to bubble and the surface appears matte. Flip and cook for an additional 30 seconds.
  • Transfer crepes to a wire rack to cool. Repeat with the remaining batter.
  • Whip the heavy cream in a stand mixer until soft peaks form.
  • To assemble, spread whipped cream and Bonne Maman INTENSE Strawberry Fruit Spread over one side of each crepe. Fold into thirds and serve with a dusting of powdered sugar or maple syrup.
