Strawberry Crepes

- 4 eggs, room temperature
- 3 Tablespoons unsalted butter, melted
- 2 1/4 cups milk
- 2 cups all-purpose flour
- 3 Tablespoons sugar
- 1 teaspoon vanilla extract
- 1 Pinch of salt
- 1 8-ounce jar Bonne Maman INTENSE Strawberry Fruit Spread
- 1 cup heavy whipping cream
Grease a medium skillet with cooking spray and preheat over medium heat.
In a blender, combine eggs, melted butter, milk, flour, sugar, vanilla, and salt. Blend until smooth but don’t overmix.
Using a 1/4 cup measure, pour batter into the center of the skillet. Quickly lift and tilt the pan to evenly coat the bottom with a thin layer of batter.
Cook for 30 seconds, until the edges begin to bubble and the surface appears matte. Flip and cook for an additional 30 seconds.
Transfer crepes to a wire rack to cool. Repeat with the remaining batter.
Whip the heavy cream in a stand mixer until soft peaks form.
To assemble, spread whipped cream and Bonne Maman INTENSE Strawberry Fruit Spread over one side of each crepe. Fold into thirds and serve with a dusting of powdered sugar or maple syrup.
