Instructions
Prep the strawberries: Blend 1 pound of fresh strawberries with sugar until smooth. Adjust sugar to taste depending on the berries’ sweetness.
Make the lemon curd: Whisk together the lemon juice, sugar, egg yolks, and salt in a heatproof bowl. Add butter and place over a double boiler, stirring with a rubber spatula until it thickens enough to coat the spatula. Strain into a bowl, cover with plastic wrap, and chill thoroughly.
Macerate the strawberries: Toss the diced strawberries with brown sugar, mint, and lime zest. Let sit for 30 minutes while flavors meld together.
Whip the cream: Beat heavy cream, confectioners’ sugar, and vanilla to medium peaks. Be careful not to over-whip, as the cream should remain smooth and silky.
Assemble: Fold half the whipped cream into half the strawberry coulis and the remaining cream into the lemon curd. Alternate layers of strawberry-cream, coulis, and lemon-curd cream in glasses for an elegant presentation. Repeat until you have eight delightful layers.
Add a spoonful of macerated strawberries on top of each glass and garnish with fresh mint.
