Ingredients
  

  • 3/4 cup strawberry shortcake crumbs
  • 1/4 cup syrup or honey (optional)
  • 3 cups strawberries, sliced
  • 1 1/2 cups whipped cream
  • 3 tablespoons chocolate pieces (optional)
  • 2 large eggs
  • 1 1/2 cups milk
  • 6 tablespoons butter, melted and cooled
  • 1 1/2 teaspoons vanilla bean paste (or one teaspoon vanilla extract)
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • Non-stick cooking spray

Instructions
 

  • Prepare the strawberry shortcake crumbs ahead of time. Bake for 8 minutes, then chill for 15 minutes to achieve the perfect crunchy texture.
  • Preheat your waffle maker according to its instructions. Set your oven to 200°F and line a baking sheet with a wire rack to keep your cooked waffles warm.
  • In a bowl, whisk together eggs and milk. Slowly pour in melted butter and vanilla bean paste, whisking until combined.
  • In a separate mixing bowl, stir together flour, sugar, baking powder, and salt. Combine the wet and dry ingredients, whisking gently until just mixed (a few lumps are fine).
  • Spray the waffle maker with non-stick cooking spray. Use 1/2 cup of batter for each waffle, cooking according to the maker's guidelines.
  • Transfer cooked waffles to the prepared baking sheet in the oven to keep warm while you make the rest.
  • To assemble, layer a waffle with strawberry shortcake crumbs, sliced strawberries, a drizzle of honey or syrup, whipped cream, and chocolate pieces if desired. Stack as high as you like and garnish with additional crumbs and whole strawberries.
