Ingredients
  

  • For the Green Goddess Feta Dressing:
  • 8 ounces feta cheese, in brine (drained)
  • 1 cup Greek yogurt
  • 4 tablespoons chopped chives
  • 4 tablespoons packed basil
  • 4 tablespoons chopped cilantro
  • ¼ cup water
  • ½ lemon juiced
  • ½ teaspoon red pepper flakes
  • Kosher salt and freshly cracked black pepper to taste
  • For the Grain Bowl:
  • 1 cup farro (or quinoa/rice for gluten-free options)
  • 3 Persian cucumbers, halved and sliced
  • cup fresh corn
  • 2 peaches, cubed
  • 1 cup cherry tomatoes, halved
  • Fresh basil to garnish
  • Kosher salt and freshly cracked black pepper to taste

Instructions
 

  • Make the dressing: Add feta, Greek yogurt, chives, basil, cilantro, water, lemon juice, and red pepper flakes to a blender. Blend until creamy—you want it smooth but not overly runny. Adjust consistency by adding more water one tablespoon at a time. Season with salt and pepper.
  • Cook the farro: Prepare farro per package instructions (typically boil for 25-30 minutes) and drain. Let it cool slightly to avoid wilting the fresh ingredients.
  • Assemble the bowl: Toss farro with ½ cup of the prepared dressing so it absorbs the flavor. Add Persian cucumbers, sweet corn, peaches, and cherry tomatoes. Taste and adjust seasoning with salt and pepper if needed.
  • Garnish: Top with fresh basil before serving for added aroma and a pop of green.
