- For the Green Goddess Feta Dressing:
- 8 ounces feta cheese, in brine (drained)
- 1 cup Greek yogurt
- 4 tablespoons chopped chives
- 4 tablespoons packed basil
- 4 tablespoons chopped cilantro
- ¼ cup water
- ½ lemon juiced
- ½ teaspoon red pepper flakes
- Kosher salt and freshly cracked black pepper to taste
- For the Grain Bowl:
- 1 cup farro (or quinoa/rice for gluten-free options)
- 3 Persian cucumbers, halved and sliced
- ⅔ cup fresh corn
- 2 peaches, cubed
- 1 cup cherry tomatoes, halved
- Fresh basil to garnish
- Kosher salt and freshly cracked black pepper to taste
Make the dressing: Add feta, Greek yogurt, chives, basil, cilantro, water, lemon juice, and red pepper flakes to a blender. Blend until creamy—you want it smooth but not overly runny. Adjust consistency by adding more water one tablespoon at a time. Season with salt and pepper.
Cook the farro: Prepare farro per package instructions (typically boil for 25-30 minutes) and drain. Let it cool slightly to avoid wilting the fresh ingredients.
Assemble the bowl: Toss farro with ½ cup of the prepared dressing so it absorbs the flavor. Add Persian cucumbers, sweet corn, peaches, and cherry tomatoes. Taste and adjust seasoning with salt and pepper if needed.
Garnish: Top with fresh basil before serving for added aroma and a pop of green.
