Ingredients
  

  • 2 medium mangoes, finely chopped (about 2 cups)
  • 1/2 red onion, finely chopped
  • 1/2 red bell pepper, finely chopped
  • 1/3 cup chopped fresh cilantro
  • Juice of 1/2 lime
  • 1/2 to 1 habanero pepper, finely chopped (with or without seeds, based on spice level)
  • 1/2 teaspoon salt

Instructions
 

  • In a medium bowl, combine the mangoes, red onion, bell pepper, cilantro, lime juice, habanero, and salt.
  • Stir the ingredients together until evenly mixed.
  • Taste and adjust seasoning as desired—add more lime juice for tanginess or a pinch of salt to brighten the flavors.
  • Serve immediately, or chill in the refrigerator for 15-20 minutes to let the flavors meld.

Notes

Store in an airtight container in the refrigerator for up to 3 days. For best flavor, serve within 24 hours.
