Ingredients
  

  • 3 tablespoons all-purpose flour (or gluten-free flour, if needed)
  • 1 broiler/fryer chicken (3 to 4 pounds), cut up, skin removed
  • 2/3 cup orange marmalade
  • 2/3 cup barbecue sauce
  • 1/4 cup soy sauce (use tamari or coconut aminos for gluten-free)
  • 2 tablespoons minced fresh gingerroot
  • Hot cooked rice or rice noodles optional

Instructions
 

  • Prep the Chicken: Place the flour in a shallow dish. Toss chicken pieces, a few at a time, in the flour until evenly coated. Shake off any excess.
  • Slow Cooker Setup: Arrange the floured chicken in the bottom of a 3-quart slow cooker, ensuring an even layer for thorough cooking.
  • Make the Sauce: In a small bowl, whisk together the orange marmalade, barbecue sauce, soy sauce, and minced ginger until smooth. Pour this over the chicken, ensuring every piece is coated.
  • Cook: Cover the slow cooker and set it to low. Allow the chicken to cook for 6-8 hours, or until the juices run clear and the meat is tender.
  • Finish and Serve: Serve over hot cooked rice or rice noodles, if desired. Garnish with fresh scallions or orange zest for added flair.

Notes

For crispy edges, broil cooked chicken for 2-3 minutes. Double the sauce for extra drizzling. Store leftovers in the fridge for 3 days or freeze up to 3 months.
