  • 3/4 cup all-purpose flour
  • 3/4 cup finely chopped pecans
  • 3 tablespoons sugar
  • 2 tablespoons brown sugar
  • 1-1/2 teaspoons vanilla extract
  • 6 tablespoons butter melted
  • 1 cup mashed ripe bananas
  • 2 tablespoons lemon juice
  • 2 packages 8 ounces each cream cheese softened
  • 1-1/4 cups sugar
  • 1 cup sour cream
  • 2 tablespoons cornstarch
  • 1-1/4 teaspoons vanilla extract
  • 1/8 teaspoon salt
  • 3 large eggs lightly beaten
  • 1 cup assorted fresh fruit for garnish

Instructions
 

  • Mix flour, pecans, sugar, brown sugar, and vanilla extract in a bowl. Stir in the melted butter until the mixture is moist. Press evenly into the bottom of a greased 9-inch springform pan and bake at 350°F for 10 minutes or until golden brown. Let it cool completely.
  • Mash the bananas and mix with lemon juice to prevent browning. In a separate bowl, beat cream cheese and sugar until smooth. Add sour cream, cornstarch, vanilla extract, salt, and eggs, and mix until just combined. Fold in the banana mixture gently.
  • Pour the filling onto the cooled crust. Place the pan on a baking sheet and bake at 350°F for 50-60 minutes, until the edges are set and the center jiggles slightly when gently shaken.
  • Combine sour cream, sugar, and vanilla extract. Spread this mixture over the cheesecake and bake for an additional 5 minutes.
  • Run a knife around the edge of the pan to prevent cracks. Let the cheesecake cool for 1 hour, then refrigerate overnight for the best texture.
