- 3/4 cup all-purpose flour
- 3/4 cup finely chopped pecans
- 3 tablespoons sugar
- 2 tablespoons brown sugar
- 1-1/2 teaspoons vanilla extract
- 6 tablespoons butter melted
- 1 cup mashed ripe bananas
- 2 tablespoons lemon juice
- 2 packages 8 ounces each cream cheese softened
- 1-1/4 cups sugar
- 1 cup sour cream
- 2 tablespoons cornstarch
- 1-1/4 teaspoons vanilla extract
- 1/8 teaspoon salt
- 3 large eggs lightly beaten
- 1 cup assorted fresh fruit for garnish
Mix flour, pecans, sugar, brown sugar, and vanilla extract in a bowl. Stir in the melted butter until the mixture is moist. Press evenly into the bottom of a greased 9-inch springform pan and bake at 350°F for 10 minutes or until golden brown. Let it cool completely.
Mash the bananas and mix with lemon juice to prevent browning. In a separate bowl, beat cream cheese and sugar until smooth. Add sour cream, cornstarch, vanilla extract, salt, and eggs, and mix until just combined. Fold in the banana mixture gently.
Pour the filling onto the cooled crust. Place the pan on a baking sheet and bake at 350°F for 50-60 minutes, until the edges are set and the center jiggles slightly when gently shaken.
Combine sour cream, sugar, and vanilla extract. Spread this mixture over the cheesecake and bake for an additional 5 minutes.
Run a knife around the edge of the pan to prevent cracks. Let the cheesecake cool for 1 hour, then refrigerate overnight for the best texture.
