The Best Flourless Chocolate Cake Recipe You'll Ever Try
This flourless chocolate cake is an indulgent and easy recipe made with rich dark chocolate, cocoa powder, and coconut oil. Naturally gluten-free, it's the ultimate decadent dessert.
¼cupnon-dairy milk (almond, oat, or coconut milk work)
Powdered sugarfor topping
Fresh raspberriesfor serving
Instructions
Preheat your oven to 375°F and grease an 8-inch round cake pan or springform pan. You can also line it with parchment paper for easy removal later.
In a small saucepan over low heat, combine 1 cup dark chocolate chips and ½ cup coconut oil. Stir continuously until fully melted and smooth. Alternatively, melt the chocolate and oil in 30-second increments in the microwave, stirring in between.
Remove from heat and let the mixture cool for a minute. Then stir in the coconut sugar, sea salt, and vanilla.
Whisk in the eggs one at a time, ensuring the mixture is smooth and glossy after each addition.
Using a sifter or fine mesh sieve, gently add the cocoa powder to the mixture, stirring until fully combined.
Pour the batter into your prepared pan and smooth the top with a spatula. Bake for 22–25 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.
Let the cake cool in the pan for 10–15 minutes. To remove, run a butter knife along the edges, then invert the cake onto a serving dish. The bottom will now be the top!
For the chocolate ganache: Melt ½ cup dark chocolate chips in the microwave and stir in non-dairy milk until smooth and creamy. Spread evenly over the cooled cake.
Dust with powdered sugar and garnish with fresh raspberries if desired. Slice and serve!
Notes
Ensure all ingredients are at room temperature to prevent the batter from seizing. Don’t overbake – a slightly underdone center keeps the cake moist and fudgy!
