Ingredients
  

  • olive oil spray
  • ½ cup scallions, finely chopped
  • ½ cup bell peppers, finely chopped
  • 2 cups corn kernels
  • ¼ teaspoon kosher salt
  • 2 teaspoons Old Bay seasoning
  • 16 oz lump crab meat
  • ¼ cup light mayonnaise
  • ½ cup nonfat Greek yogurt
  • 2 tablespoons lemon juice
  • ¼ cup butter crackers or gluten-free breadcrumbs (for topping)
  • Crudités and/or butter crackers (for serving)

Instructions
 

  • Preheat your oven to 450°F.
  • Spray a skillet with olive oil spray and cook the scallions over medium heat for 1-2 minutes until aromatic.
  • Add the bell peppers and cook until softened, about 2-3 minutes.
  • Increase heat to high and add the corn with 1/4 teaspoon of kosher salt. Cook until the corn begins to caramelize, about 4-5 minutes, stirring only occasionally.
  • Sprinkle in the Old Bay seasoning, then remove the skillet from heat and let the veggie mixture cool briefly.
  • In a large mixing bowl, combine the crab meat, light mayo, Greek yogurt, lemon juice, and the cooled vegetable mixture.
  • Gently stir to combine, being careful not to break up the crab meat too much.
  • Spoon the mixture into an 8x8 oven-safe baking dish or similar-sized dish, then sprinkle crushed crackers or breadcrumbs evenly over the top.
  • Bake for 10-15 minutes until the dip is golden and bubbling.
  • Serve immediately with your choice of crudités, crackers, or both.

Notes

Customize this recipe by replacing breadcrumbs with almond flour for a keto-friendly version. For dairy-free, substitute Greek yogurt and mayo with plant-based alternatives like cashew cream.
