  • 1/4 cup thinly sliced red onion separated into rings
  • 1 14-ounce can artichoke hearts rinsed and coarsely chopped
  • 1 medium tomato seeded and diced
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon dried oregano
  • 1 16- to 20-inch baguette preferably whole-grain
  • 2 slices provolone cheese about 2 ounces, halved
  • 2 cups shredded romaine lettuce
  • 1/4 cup sliced pepperoncini optional

Instructions
 

  • Prepare the onions: Place the sliced red onion in a small bowl and cover with cold water. Let them sit while you prep the other ingredients. This step helps mellow the onion’s sharpness.
  • Mix the filling: In a medium bowl, combine the chopped artichoke hearts, diced tomato, balsamic vinegar, olive oil, and oregano. Stir until everything is evenly coated.
  • Prepare the baguette: Cut the baguette into four equal sections. Split each piece horizontally and remove about half of the soft bread inside to create space for the fillings.
  • Assemble the sandwich: Drain the onions and pat them dry. Layer each baguette bottom with a half slice of provolone cheese. Spoon the artichoke mixture evenly over the cheese. Add onion rings, shredded romaine lettuce, and sliced pepperoncini (if you’re using them).
  • Finish and enjoy: Top with the baguette pieces, press down lightly to secure the ingredients, and serve immediately. For the freshest results, enjoy these sandwiches right after assembly.
