Ingredients
  

  • 4 tilapia fillets (4 ounces each)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon butter
  • 1 medium tomato, thinly sliced
  • 1/2 cup soft bread crumbs
  • 1/4 cup chopped walnuts
  • 2 tablespoons lemon juice
  • 1 1/2 teaspoons butter, melted

Instructions
 

  • Season the tilapia fillets on both sides with salt and pepper.
  • In a large skillet lightly coated with cooking spray, melt the butter over medium-high heat. Add the tilapia and cook for 2-3 minutes per side, or until lightly browned.
  • Transfer the fish to a broiler pan or baking sheet and layer the tomato slices evenly over the fillets.
  • In a small bowl, combine the bread crumbs, chopped walnuts, melted butter, and lemon juice. Stir until well combined, then spoon the mixture over the tomato-topped fillets.
  • Broil the tilapia 3-4 inches from the heat for 2-3 minutes, or until the topping is golden brown and crisp, and the fish flakes easily when tested with a fork.
