Ingredients

  • 3 cans chunk light or flaked light tuna, drained well
  • 1/4 cup mayonnaise mixed with 1 tsp wasabi paste (optional)
  • 2–3 small mushrooms, diced
  • 1/2 cup panko breadcrumbs
  • 2 eggs whisked
  • 1 tsp garlic powder
  • 1 tsp lemon pepper
  • Salt to taste
  • 1 tbsp oil (we recommend a blend of olive oil and sesame oil)

Instructions

  • In a medium-sized mixing bowl, combine all ingredients using a fork, then mix thoroughly by hand until the mixture is cohesive.
  • Form the mixture into six even burger patties. Note that these will be slightly more moist than traditional burgers, requiring gentle handling.
  • Heat a large non-stick skillet over medium-high heat and add the oil.
  • Carefully place the patties into the skillet, ensuring not to overcrowd. Pan-fry for 3–4 minutes per side or until golden brown and set. Gently press down with a spatula as they cook for a more uniform crust.
  • Remove cooked burgers from the skillet and serve on whole-grain buns with additional wasabi mayo, lettuce, and tomato slices. Enjoy!
