- 1 pound red potatoes (about 2 large), cubed
- 1/4 pound fresh green beans, trimmed
- 1/2 cup oil and vinegar salad dressing
- 1/2 teaspoon grated lemon zest
- 1/4 teaspoon freshly ground black pepper
- 6 cups torn romaine lettuce
- 4 hard-boiled large eggs sliced
- 3 pouches (2-1/2 ounces each) light tuna in water
- 2 medium tomatoes, chopped
Place the cubed potatoes in a large saucepan and add enough water to cover. Bring to a boil over medium heat. Reduce to a simmer and cook uncovered for 8-10 minutes, adding the green beans during the last 3 minutes of cooking time.
Drain the potatoes and green beans and immediately transfer them to a bowl of ice water to cool. Drain again and pat dry with a clean towel.
In a small bowl, whisk together the oil and vinegar salad dressing, grated lemon zest, and freshly ground black pepper.
Divide the romaine lettuce evenly among 4 serving plates. Arrange the potatoes, green beans, hard-boiled eggs, tuna pouches, and chopped tomatoes on top of the lettuce.
Serve the salad with the lemon-zest dressing drizzled over each plate, and enjoy immediately!
