  • 2 cups uncooked whole wheat spiral pasta about 5 ounces
  • 2 medium sweet peppers chopped
  • 1 medium zucchini thinly sliced
  • 1 yellow summer squash thinly sliced
  • 1/2 cup finely chopped red onion
  • 2 cups cubed cooked turkey or chicken
  • 3 tablespoons chopped fresh parsley
  • 1/2 cup peppercorn ranch salad dressing
  • 1/4 teaspoon salt
  • 1/4 cup shredded Parmesan cheese

Instructions
 

  • Start by cooking the pasta according to the package instructions. Use well-salted water for the best flavor. Once done, drain and rinse under cold water to stop the cooking process, then drain well.
  • Meanwhile, chop the sweet peppers, zucchini, summer squash, and red onion into bite-sized pieces. Aim for uniform sizes to ensure even texture throughout the salad.
  • In a large mixing bowl, combine the cooked pasta, chopped vegetables, cubed turkey, and fresh parsley.
  • Drizzle the peppercorn ranch dressing over the salad and sprinkle in the salt. Toss everything gently until the ingredients are fully coated and evenly distributed.
  • Finish by topping the salad with shredded Parmesan cheese. Serve immediately, or refrigerate for up to 3 days.
