Turkey Pesto Sandwich

Ingredients
  

  • 1 loaf (1 pound) French bread
  • 1 cup prepared pesto
  • 1 pound thinly sliced deli turkey
  • 1/2 pound provolone cheese, thinly sliced
  • 2 small zucchini, thinly sliced
  • 2 medium tomatoes, thinly sliced
  • 1 medium red onion, thinly sliced

Instructions
 

  • Preheat your oven to 350°F.
  • Cut the top fourth off the loaf of French bread and hollow out the bottom, leaving a 1/2-inch shell. Save the removed bread for another use or discard.
  • Spread the pesto generously on the inside of both the top and bottom of the bread.
  • In the hollowed-out loaf, layer the sliced turkey, provolone cheese, zucchini, tomatoes, and red onion. Press the layers together to ensure the sandwich stays compact.
  • Place the top of the bread back on and wrap the entire loaf tightly in foil.
  • Transfer the wrapped sandwich to a baking sheet and bake for 25-30 minutes, until heated through.
  • Let the sandwich rest for 10 minutes before slicing it into portions to serve.
