Ingredients
  

  • 3 Tbsp avocado oil
  • 1/2 cup yellow onion, finely chopped *
  • 1 lb lean ground turkey
  • 3 cloves garlic, minced *
  • 1 Tbsp fresh ginger, peeled and grated or sliced
  • 1/2 tsp ground turmeric, or 2 tsp fresh turmeric, grated
  • 1/2 tsp sea salt, to taste
  • 4 stalks green onion, chopped
  • 1 Tbsp avocado oil
  • 2 large carrots, peeled and chopped
  • 1 large yellow squash, chopped
  • 1 large crown broccoli, chopped

Instructions
 

  • Make the Turkey: Heat the avocado oil in a large non-stick skillet over medium-high heat. Add the onion and sauté, stirring occasionally, until translucent (about 3 minutes). Add the ground turkey and brown for 3 minutes per side. Use a spatula to break it into smaller pieces. Stir in garlic, ginger, turmeric, and sea salt, and cook for 5-8 minutes, or until the turkey is cooked through. Add green onion and stir to combine.
  • Sauté the Vegetables: In the same skillet or a separate one, heat 1 Tbsp avocado oil over medium-high heat. Add the chopped carrots, yellow squash, and broccoli. Cover and cook for 3 minutes, then uncover and continue cooking, stirring occasionally, until the vegetables are tender but still crisp (about 8-12 minutes total).
  • Assemble the Bowls: Divide the turkey and vegetables among bowls, layering them with your choice of rice or cauliflower rice. For extra flavor, drizzle with coconut aminos or your favorite sauce.
