Ingredients
  

  • 10.5 oz Ice Cubes approximately 2 cups
  • ¾ cup Unsweetened Almond Milk
  • 1.4 oz Chocolate Protein Powder about 1 scoop
  • 2 tablespoons PB2 Powdered Peanut Butter
  • ½ - ¾ teaspoon Xanthan Gum or 2 teaspoons ground psyllium husk
  • 1 tablespoon Sweetener of Choice maple syrup or erythritol
  • 1-2 tablespoons Dairy-Free Dark Chocolate Chips optional topping
  • 1 teaspoon Peanut Butter optional topping
  • 1 teaspoon Chopped Peanuts optional topping

Instructions
 

  • In a high-speed blender (we recommend one with a tamper attachment) or a food processor, combine the ice cubes, almond milk, chocolate protein powder, PB2 powdered peanut butter, and your sweetener of choice.
  • Blend on high speed for about 1 minute, stopping the blender or processor as needed to scrape down the sides or use the tamper to push the mixture closer to the blade.
  • Continue blending until the ice is transformed into a smooth, creamy consistency.
  • Stop blending and add ½ teaspoon xanthan gum (or substitute psyllium husk). Blend again for 30 seconds on high speed. Watch as the mixture becomes airy and fluffy.
  • If the mixture isn't fluffy enough, add the remaining xanthan gum or psyllium husk, but proceed cautiously—a little goes a long way!
  • Serve immediately with your favorite toppings. Avoid storing leftovers in the fridge or freezer, as the fluff is best enjoyed fresh.
