Vegan Protein Fluff

- 10.5 oz Ice Cubes approximately 2 cups
- ¾ cup Unsweetened Almond Milk
- 1.4 oz Chocolate Protein Powder about 1 scoop
- 2 tablespoons PB2 Powdered Peanut Butter
- ½ - ¾ teaspoon Xanthan Gum or 2 teaspoons ground psyllium husk
- 1 tablespoon Sweetener of Choice maple syrup or erythritol
- 1-2 tablespoons Dairy-Free Dark Chocolate Chips optional topping
- 1 teaspoon Peanut Butter optional topping
- 1 teaspoon Chopped Peanuts optional topping
In a high-speed blender (we recommend one with a tamper attachment) or a food processor, combine the ice cubes, almond milk, chocolate protein powder, PB2 powdered peanut butter, and your sweetener of choice.
Blend on high speed for about 1 minute, stopping the blender or processor as needed to scrape down the sides or use the tamper to push the mixture closer to the blade.
Continue blending until the ice is transformed into a smooth, creamy consistency.
Stop blending and add ½ teaspoon xanthan gum (or substitute psyllium husk). Blend again for 30 seconds on high speed. Watch as the mixture becomes airy and fluffy.
If the mixture isn't fluffy enough, add the remaining xanthan gum or psyllium husk, but proceed cautiously—a little goes a long way!
Serve immediately with your favorite toppings. Avoid storing leftovers in the fridge or freezer, as the fluff is best enjoyed fresh.
