Watermelon Cucumber Feta Salad Cups

Ingredients
  

  • 1 whole watermelon
  • ¾ cup diced cucumber
  • ¾ cup feta cheese, divided
  • 1 tablespoon red wine vinegar
  • 2 teaspoons olive oil
  • as needed Salt and pepper to taste
  • optional Balsamic glaze

Instructions
 

  • Slice a whole watermelon into two-inch-thick rounds.
  • Using a cookie cutter or two-inch biscuit cutter, carve out circles of watermelon to serve as the "cups." Reserve leftover scraps.
  • With a melon baller, scoop out the centers of each watermelon circle to create a small cavity while keeping the walls intact.
  • Dice the scooped-out watermelon remnants. You’ll need about ¾ cup—set aside the rest for snacking!
  • In a bowl, toss diced watermelon, cucumber, and ½ cup of crumbled feta cheese with red wine vinegar and olive oil.
  • Season the mixture with salt and pepper to taste.
  • Spoon the mixture into the prepared watermelon cups.
  • Garnish each cup with the remaining feta cheese. If desired, drizzle with balsamic glaze just before serving.

Notes

Prep the watermelon 'cups' and filling separately a day in advance for optimal freshness. Store leftovers in airtight containers without balsamic drizzle for up to two days.
