This watermelon mojito sorbet is the ultimate refreshing summer dessert. Made with juicy watermelon, lime, and mint, it's a healthy, guilt-free treat that's vegan, gluten-free, and deliciously hydrating.
3tablespoonspacked fresh mint leaves (about 2 sprigs)

Instructions
Arrange watermelon cubes in a single layer on a baking sheet lined with plastic wrap or parchment paper. Freeze overnight. (Single-layer freezing ensures the cubes don’t clump together, making them easier to blend.)
In a food processor or high-power blender, combine the frozen watermelon cubes, lime juice, mint leaves, and water or rum.
Blend until smooth, pausing to scrape down the sides as needed. The mixture should reach a soft sorbet-like consistency.
Transfer the mixture into a loaf pan or freezer-safe container. Freeze for at least 2 hours.
After freezing, the sorbet will be scoopable within 2 to 3 hours. If frozen longer, allow it to sit at room temperature for 2-3 minutes before scooping.
Notes
*Note: Using water will produce a firmer freeze. Adding rum keeps the sorbet slightly softer and won’t impart an overly alcoholic taste.
