Ingredients
  

  • 1 cup mixed olives, cut into quarters if large
  • 1/3 cup sun-dried tomatoes packed in oil, drained and roughly chopped
  • 3 tablespoons extra-virgin olive oil
  • 2 teaspoons fresh lemon or orange zest
  • 1 clove garlic, minced
  • 2 sprigs fresh rosemary (plus more for topping)
  • 8 ounces feta cheese block, drained
  • 3/4 cup plain whole milk Greek yogurt
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon milk of choice (only if needed for thinning)
  • Minced fresh rosemary
  • Cracked black pepper
  • Additional lemon zest
  • Fresh veggies or crackers

Instructions
 

  • Preheat your oven to 400℉.
  • Combine olives, sun-dried tomatoes, olive oil, lemon zest, and minced garlic in a small ovenproof dish. Mix well, and nestle fresh rosemary sprigs into the mixture.
  • Roast the olive mixture for 12 minutes or until heated through and fragrant.
  • Meanwhile, add feta cheese and Greek yogurt to a food processor. Secure the lid and blend, slowly streaming in olive oil. Pause to scrape down the sides as needed.
  • If the whipped feta is too thick, blend in 1 tablespoon of milk for extra creaminess.
  • Spread the creamy feta mixture evenly into a shallow oven-safe dish.
  • Switch your oven to broil and position the rack in the middle. Broil the feta for 3-4 minutes until it’s warm and bubbling lightly along the edges.
  • Remove from the oven and spoon the roasted olives over the whipped feta.
  • Garnish with fresh rosemary, cracked black pepper, and extra lemon zest. Serve warm with veggies or crackers.
