- 2 lbs red potatoes cut into chunks
- 1/2 cup finely diced red onion
- 1/2 cup diced celery
- 1/4 cup chopped fresh chives plus more for garnish
- 3/4 cup full-fat sour cream
- 2 tablespoons whole milk
- 2 teaspoons apple cider vinegar
- 1/2 teaspoon fine salt
- 1/4 teaspoon black pepper
- 1/2 cup crumbled blue cheese 2 ounces, plus more for garnish
Place the cubed potatoes in a large saucepan and cover with water. Bring to a boil.
Cook until fork-tender, about 8-10 minutes. Drain and transfer to a large bowl.
Add onion, celery, and chives to the potatoes. Toss gently to combine.
In a separate bowl, whisk together sour cream, milk, apple cider vinegar, salt, and pepper.
Stir in the crumbled blue cheese.
Pour the dressing over the potato mixture and toss gently until coated.
Cover and refrigerate the potato salad until cold, at least 1 hour or up to 2 days in advance.
