Ingredients
  

  • 2 lbs red potatoes cut into chunks
  • 1/2 cup finely diced red onion
  • 1/2 cup diced celery
  • 1/4 cup chopped fresh chives plus more for garnish
  • 3/4 cup full-fat sour cream
  • 2 tablespoons whole milk
  • 2 teaspoons apple cider vinegar
  • 1/2 teaspoon fine salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled blue cheese 2 ounces, plus more for garnish

Instructions
 

  • Place the cubed potatoes in a large saucepan and cover with water. Bring to a boil.
  • Cook until fork-tender, about 8-10 minutes. Drain and transfer to a large bowl.
  • Add onion, celery, and chives to the potatoes. Toss gently to combine.
  • In a separate bowl, whisk together sour cream, milk, apple cider vinegar, salt, and pepper.
  • Stir in the crumbled blue cheese.
  • Pour the dressing over the potato mixture and toss gently until coated.
  • Cover and refrigerate the potato salad until cold, at least 1 hour or up to 2 days in advance.
  • Garnish with additional chives and blue cheese before serving, if desired.
