Ingredients
  

  • 1 tablespoon olive oil
  • 1 package (12 ounces) fully cooked Italian chicken sausage links, cut into 1-inch pieces
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper flakes
  • 1-1/2 pounds red potatoes (about 5 medium), thinly sliced
  • 1 package (10 ounces) frozen corn
  • 1/4 teaspoon pepper
  • 1-1/4 cups vegetable broth
  • 2 cups fresh baby spinach

Instructions
 

  • Heat the olive oil in a large 12-inch skillet over medium-high heat. Add the sausage and onion and cook until the onion is soft and translucent, about 4-5 minutes.
  • Stir in the garlic and crushed red pepper flakes. Cook for 1 minute until fragrant.
  • Add the sliced potatoes, frozen corn, pepper, and vegetable broth. Bring the mixture to a boil.
  • Reduce the heat to medium, cover the skillet, and let it cook for 15-20 minutes, or until the potatoes are tender.
  • Remove the lid and stir in the spinach. Cook for 1-2 minutes until the spinach has wilted, then serve immediately.
