Ingredients
  

  • 1 pound (4 cups) fresh or frozen peas
  • 1 1/2 teaspoons Kosher salt
  • 2 tablespoons olive oil
  • 2 tablespoons finely minced yellow onion (about 1/4 small onion)
  • 1/4 teaspoon Aleppo pepper
  • 1 teaspoon white wine vinegar
  • 2 to 3 radishes, thinly sliced
  • 1/4 cup packed mint leaves, chopped
  • 1/4 cup chopped chives
  • 2 ounces feta or shaved parmesan

Instructions
 

  • Bring a small pot of water to a boil. Add 1 1/2 teaspoons of salt, then stir in the fresh or frozen peas. Blanch for about 5 minutes until they’re bright green and tender with a slight bite. Avoid overcooking as this can lead to mushy, dull-colored peas.
  • Turn off the heat, drain the peas immediately, and set them aside to cool slightly.
  • Heat olive oil in a skillet over medium heat. Add the minced onion and Aleppo pepper, sautéing gently until the onion softens, about 5 minutes. Stir in the white wine vinegar and remove from heat.
  • Add the radish slices and peas to the skillet, folding gently to mix. Stir in the chopped mint and chives, ensuring even distribution of herbs. Sprinkle crumbled feta over the top, taste, and adjust seasoning with salt or pepper if needed.
  • Transfer the salad to a serving bowl. Enjoy it warm, at room temperature, or chilled based on your preference.
